All of the cakes at Daniel's of Paris begin with a French genoise (or sponge cake). Genoise is a naturally drier cake, but its light texture and delicate flavor are enhanced by simple syrup, available in a variety of flavors. When assesmbled together, the cake, syrup and frosting create a not too sweet, not too rich dessert, elegant enough to have at any occasion.
